Kitchen Steel Explained: VG-10, Powder Steel, and High-Carbon Stainless

Kitchen steel is a different conversation from pocket knife steel. A folder meets cardboard and rope; a kitchen knife meets onion acid, tomato skins, chicken bones, and a wet sink — every day, for years. The steels that win at the cutting board are chosen for that life: corrosion resistance first, edge stability second, and a sharpening rhythm a cook can actually keep.
Four names cover nearly everything on our kitchen shelf: VG-10, powder steel, 440C, and plain high-carbon stainless. Here is what each one honestly is, and which kitchen it belongs in.
01 What makes a kitchen steel different?
A kitchen steel is judged by corrosion resistance and edge stability under daily wet, acidic work — not by pocket-steel bragging rights. It must shrug off onion acid and damp sponges, hold a fine push-cutting edge for weeks of prep, and come back to keen on an ordinary whetstone without a ceremony.
That is why kitchen steels cluster between 58 and 63 HRC rather than chasing the hardest number on the chart — hard enough for long edge life and thin geometry, tough enough to survive a winter squash or an accidental bone. Our HRC dossier walks the full scale; this guide stays at the board.
02 VG-10: the Japanese workhorse
VG-10 is a Japanese high-carbon stainless from Takefu — roughly 1% carbon, 15% chromium, plus vanadium, molybdenum, and cobalt — heat-treated in kitchen knives to about 60 HRC. It is the classic core steel of quality Damascus kitchen knives: hard enough to take a genuinely keen edge, stainless enough for a busy sink, and cooperative on standard whetstones.
Its character is balance. VG-10 keeps a working edge through weeks of daily cooking, strops back in seconds, and forgives the occasional rushed rinse. Nearly every Damascus kitchen piece in the vault — HEZHEN, MITSUMOTO SAKARI, SAMCOOK, SENKEN — cuts on a VG-10 core beneath its patterned cladding. The waves are the face; VG-10 is the blade.
03 Powder steel comes to the kitchen
Powder metallurgy steel is atomised and sintered rather than cast, which locks the alloy into a finer, more even grain — and that process has now reached the kitchen shelf. The SANMEIHO line runs powder steel hardened to 63 HRC, a number most kitchen knives never approach.
At 63 HRC with fine, evenly spread carbides, edge life stretches from weeks to months, and the blade takes the kind of thin, laser-like grind that falls through produce. The honest trade: less forgiveness. Twist the edge in a squash or scrape a glass board and you may chip rather than roll — and resharpening takes more patience than softer steels. Choose powder steel if your technique is deliberate and you want the longest interval between stones.
04 High-carbon stainless: the honest middle
High-carbon stainless — the family behind HOSHANHO's kitchen line — is the unglamorous workhorse: more carbon than budget stainless for real edge life, enough chromium for everyday rust resistance, and none of the sharpening resistance of heavily alloyed steels. It is the steel that disappears into the work.
Its superpower is the maintenance rhythm. A high-carbon stainless edge refreshes on a honing rod in thirty seconds and sharpens fully on any decent whetstone, which means it is sharp far more often than a premium steel whose owner dreads the bench. For most home kitchens, this is the value sweet spot — proven, in some cases, by thousands of reviews.
05 440C and 3Cr14: reading the budget tiers honestly
440C is the respectable budget stainless: a genuinely hardenable cutlery steel (around 58–60 HRC in kitchen use) with good corrosion resistance and easy sharpening, at a price that leaves room in the budget for a cutting board. It gives up some edge life to VG-10, not dignity — the 440C-core Damascus pieces on the shelf are honest knives at an honest price.
3Cr14 is a different matter — a soft, low-carbon stainless that cannot hold a working edge. It appears in kitchen sets as scissors, shears, and utility odds and ends, which is a fair use: shears do not need edge retention. But a primary knife in 3Cr14 is a compromise we do not stock. When a set lists its knives' steel by name and quietly leaves the shears anonymous, that is the spec sheet telling the truth.
06 Choosing your kitchen steel
Match the steel to the cook, not the forum ranking:
- ◆ VG-10 (60 HRC) — the default choice for a serious kitchen. Long edge life, stainless manners, honest sharpening. Where most cooks should start and many should stop.
- ◆ Powder steel (63 HRC) — for the deliberate slicer who wants months between sharpenings and treats the edge with respect. The longest-lasting edge on the kitchen shelf.
- ◆ High-carbon stainless — for the practical cook who sharpens little and often, and wants a knife that is always sharp rather than occasionally spectacular.
- ◆ 440C — for the budget-conscious buyer who still wants a named, hardenable steel and easy care. Honest value without mystery metal.
