Steel, Told Straight: The Complete Knife Steel Guide

Every knife is a compromise poured into a mould. Hardness fights toughness, edge retention fights easy sharpening, and corrosion resistance quietly taxes all three. The steel a maker chooses is the compromise made visible — which is why two knives that look alike in a photograph can behave like strangers in the hand.
This guide is the vault's plain-language map of modern knife steel. No metallurgy degree required, no marketing adjectives allowed. 01 What is knife steel?
Knife steel is iron with a little carbon and a few deliberate strangers — chromium for stain resistance, vanadium for wear resistance, molybdenum for strength at the grain level. Change the recipe by a fraction of a percent and you change the blade. That is why steel names read like licence plates: each code is a recipe with a price.
The promises are easy to make. A blade can be very hard, very tough, very stainless, or very cheap. The prices arrive when you ask for two of those at once. Understanding the trade-off is the whole game — everything else is vocabulary.
02 The four properties that decide everything
Hardness — measured on the Rockwell C scale as HRC — is resistance to deformation. Harder steel holds a finer edge longer but chips more readily and resists the sharpening stone.
Toughness is resistance to breaking. A tough blade flexes or rolls at the edge instead of chipping. It forgives bad technique, lateral prying, and the occasional drop on a tile floor.
Edge retention is how long the working edge survives abrasive wear — cardboard, rope, vegetable skins. It tracks hardness and carbide content but is not identical to either.
Corrosion resistance is the steel's ability to shrug off water, acid, and salt. Cross roughly 13% chromium and a steel earns the name "stainless" — a marketing term, not a physics guarantee. Everything stainless can still stain.

03 Damascus: pattern with a past
Modern Damascus is pattern-welded steel — alternating layers of two alloys, stacked, forged, folded, and then etched so the layers appear as waves, ladders, or rain. The "67 layers" on a kitchen knife spec sheet is a literal count of those laminations wrapped around a hard core steel that does the actual cutting.
Done honestly, Damascus cladding gives you a striking face over a serious core, with a measure of added toughness and food release from the textured surface. Done dishonestly, it is a printed or acid-etched pattern on ordinary mono-steel. The difference matters, and it is knowable — our Damascus dossier shows exactly how to tell them apart.
04 Powder steels: M390, S90V, and the 154CM baseline
Powder metallurgy changed the ceiling. Instead of melting and casting, the alloy is atomised into powder and sintered under pressure, which locks the alloying elements into a far finer, more even grain. The result: steels like M390 and S90V that hold edges for what used to be an impossible length of time, at hardness levels that used to mean brittleness.
M390 is the balanced aristocrat — elite edge retention with genuine corrosion resistance. S90V trades some sharpening ease and toughness for even longer edge life. And 154CM, an older conventionally cast steel, remains the honest baseline: easy to sharpen, tough enough to trust, and priced without ceremony. 05 How do you read a knife spec sheet?
A knife spec sheet is read in one order: blade steel first, then the HRC target, then the grind and the geometry, and only afterwards the pattern on the face. Every line is a claim about something, and the lines conspicuously absent are claims as well — and both are worth reading.
A spec sheet is a confession written in code. "60 HRC" tells you the heat treatment target, not the quality of the steel. "Damascus" tells you about the cladding, not the core. "Titanium handle" says nothing about the blade at all. Learning to read what is being claimed — and what is conspicuously not being claimed — is the single most valuable knife-buying skill.

06 Stainless or carbon: the honest fork in the road
Stainless steel asks little and gives reliably. Carbon steel asks for a towel and a moment of attention, and repays it with easy sharpening, a living patina, and a feel on the stone that stainless rarely matches. Neither is superior; they are different relationships.

07 How we choose steel for the vault
Every piece in the vault is picked the way a smith chooses finished work: the steel is named, the hardness is stated, and the claims survive contact with a sharpening stone.
